CAULIFLOWER CHEESE SOUP
1 Large head cauliflower 1 can beef or chicken broth 2 T. onion, minced 3 cup milk 2 T. butter, melted 2 cup grated American or cheddar 2 T. flour cheese ½ tsp. salt ¼ cup parsley ( optional ) ¼ tsp. pepper
Saute onion In butter until tender. Blend in flour, salt and pepper. Gradually stir in broth and milk. Cook over medium heat, stirring constantly, until mixture reaches boiling point. Add cheese and stir until it melts. Break cauliflower into small pieces and add along with parsley. Heat to serving temperature. Makes 2 quarts.
