GARBANZO BEAN TOMATO SALAD

Ingredients

3 tablespoons vegetable oil
1 tablespoon red wine vinegar
1 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 (15 ounce) can garbanzo beans or chickpeas, rinsed and drained
3 medium tomatoes, thinly sliced
1 medium onion, thinly sliced
1 tablespoon minced fresh basil

 Instructions


Prepare seasonings, combining oil, vinegar, 1/2 teaspoon salt and 1/8 teaspoon pepper in a bowl. Add the beans, tossing until coated.

Put the tomatoes in a serving bowl and add the onion on top. Sprinkle with basil, salt and pepper then add the bean mixture on top. Chill covered for an hour or longer. Prior to serving toss the salad well.
