1 small green pepper, seeded, chopped
1 medium carrot, shredded
1 medium onion, finely chopped
1 stalk celery, finely chopped
1 cup soft whole wheat bread crumbs, or other whole grain bread crumbs
2 egg whites, or 1/4 cup egg substitute
1 pound lean ground beef, or ground turkey
2 tablespoons chopped fresh parsley
1 tablespoons low-sodium soy sauce
1/4 teaspoon dried thyme, crumbled
1/4 teaspoon dried oregano, crumbled
1/4 teaspoon pepper
1 tablespoons tomato sauce, or catsup
In large bowl, combine all ingredients except tomato sauce; mix well. Pat into large even circle to loosely fit bottom of skillet. Spread tomato sauce over top of meatloaf.
Place skillet over medium heat. Cover with Temp Tone control open; cook until tone sounds. Reduce heat to low, close control and cook 30 minutes. Remove from heat and let stand 10 minutes, covered, to allow juices to reabsorb before cutting into wedges or slices.
